To balance out the bitter taste, the fermented (unroasted) organic cacao nibs of the Peruvian variety Criollo are coated with delicious yacon syrup and then dried.

The special thing about Yacon is the quality of its sugar, which is mainly in the form of oligofructose (or fructooligosaccharides). Oligofructose cannot be used by the digestive enzymes and therefore hardly causes any calories and protects the blood sugar level.
