Coconut Flour – Gluten-Free and High in Fibre

Coconut trees have been cultivated for at least 3000 years. The nutritious coconuts rich in good fat and high-quality protein made tropical islanders enjoy a good health over many generations, before they often changed their eating habits due to exterior influences.

Coconut flour is made from fresh coconut meat, which has been de-oiled and dried and then ground into fine flour.

With 40% dietary fibres coconut flour is one of the highest fibre foods. Fibres promote digestive and intestinal health, bind toxins, reduce blood lipids, regulate blood sugar levels and help to keep you slim.

Unlike grains coconut flour is free of gluten and phytic acid and great to use in baking recipes, bread spreads, sauces, desserts and more.

Since fibres absorb liquid, coconut flour is an excellent binding agent for soups and sauces and gives dishes a more smooth texture than is possible with normal flour.

After oil extraction, the de-oiled coconut meat is dried in raw food quality below 40 °C, and afterwards finely ground like ordinary flour.

Use

In baking recipes you can replace up to 30% of standard flours (containing gluten) by coconut flour. Due to its high absorbency add more liquid to the recipe. Sugars can be reduced as coconut flour has a slightly sweet taste.
