In order to develop the full potential of minerals and vitamins, the raw buckwheat grains are sprouted after harvesting. This germination process activates the dormant nutrients in the grain. Gentle drying at a maximum temperature of 42°C preserves these nutrients and gives the kernels their perfect crunchiness.
