Cocoa butter is the solid form of the pure oil from the cocoa bean. The cocoa bean is an amazing food given to us by Mother Nature. It was considered a gift from God by the Aztecs and was used not only as an offering but also as a means of payment. It is estimated that raw cocoa contains more than 300 substances and is one of the foods with the most antioxidants. The new batch contains 70% Criollo cocoa (previously 100%). The remaining 30% are Forastero, Trinitario and Nacional. They are also high quality, certified organic and from Peru. This is whyour cocoa powder is temporarily called "Cocoa Powder Peru". In comparison, it has a slightly more intense flavour and is slightly bitter, but also very tasty. Why cocoa powder? Cocoa has all the benefits of chocolate, but without the undesirable high sugar content and additives. As a reminder: milk chocolate only has a cocoa content of around 25%. The rest is sugar, milk powder, soya lecithin (emulsifier) and flavourings. Effect of cocoa? Raw cocoa is very nutritious. It has been determined that raw cocoa contains around 300 substances. It also contains the happiness combination of serotonin, dopamine, anandamide and phenetylamine (PEA). Gentle processing for maximum flavour To produce the powder, the fermented, unroasted fine flavoured cocoa beans are first ground. The resulting dark brown, viscous cocoa mass is cold-pressed to form a cake, from which the liquid, golden-yellow cocoa butter slowly drains off. The remaining "cocoa press cake" is then dried, very finely ground and sieved. This process does not require any chemicals, additives or extraction solvents and produces a fine, soft powder with a full, wonderful chocolate flavour. Delicate, stone-ground cashew butter, unroasted cocoa from Peru and coconut blossom sugar melt together in these classic pralines to create a unique treat. The maca powder and bourbon vanilla refine the delicacy perfectly. Naturkostbar produces the fine Classic chocolates traditionally and lovingly by hand in its factory in Uetendorf. Selected, organic ingredients (almost all of which are of raw food quality) are used. Wherever possible, the raw materials are purchased directly from the producers in the country of origin. The processing is also unique. The unroasted cocoa beans are sorted by hand and then carefully processed in a stone mill. Was macht unsere veganen Schokoladen besonders?
Unsere veganen Schokoladen sind alle glutenfrei und aus Bio-Zutaten produziert. Ausser iChoc White Vanilla haben die meisten Varianten einen hohen bis sehr hohen Kakaoanteil und sind aus rohen Zutaten hergestellt. Das bedeutet, dass die Kakaobohnen nur fermentiert, jedoch nicht geröstet werden. Sowohl Naturkostbar-Schokoladen als auch COCOA-Produkte werden Bean-to-Bar (direkt von der Kakaobohne zur Schokoladentafel) hergestellt und enthalten anstellen von Rohrzucker den gesünderen Kokosblütenzucker, dessen glykämische Index (Mass zur Bestimmung wie schnell der Blutzuckerspiegel ansteigt) mit 35 deutlich unter dem gewöhnlichen Zucker (70) liegt.

COCOA Bean-to-Bar Schokolade
Der innovative Kleinbetrieb aus Polen ist vor allem für seine schokolierten Nüsse und Trockenfrüchte bekannt. Der Kakaoanteil bewegt sich um die 60%. Die Schokolade der Kokosmilch (Vegemylk) -Varianten sind etwas zarter und haben ca. 45% Kakaoanteil. Sie sind an der weissen Verpackung zu erkennen. Aber auch die praktischen 50g Schokoladetafeln bieten viel Abwechslung und Genuss. Gesüsst werden alle Produkte mit Kokosblütenzucker. Die Schokoladen werden Bean-to-Bar hergestellt, d.h. COCOA verwendet keine vorgefertigte Couverture welche veredelt wird, sondern stellt die Schokolade direkt aus fermentierten Bio Kakaobohnen her. Dazu werden die Kakaobohnen geschält und sorgfältig für über 60 Stunden in Temperatur unter 45˚C in einem Melangeur conchiert.

Der innovative Kleinbetrieb aus Polen ist vor allem für seine schokolierten Nüsse und Trockenfrüchte bekannt. Der Kakaoanteil bewegt sich um die 60%. Die Schokolade der Kokosmilch (Vegemylk) -Varianten sind etwas zarter und haben ca. 45% Kakaoanteil. Sie sind an der weissen Verpackung zu erkennen. Aber auch die praktischen 50g Schokoladetafeln bieten viel Abwechslung und Genuss. Gesüsst werden alle Produkte mit Kokosblütenzucker. Die Schokoladen werden Bean-to-Bar hergestellt, d.h. COCOA verwendet keine vorgefertigte Couverture welche veredelt wird, sondern stellt die Schokolade direkt aus fermentierten Bio Kakaobohnen her. Dazu werden die Kakaobohnen geschält und sorgfältig für über 60 Stunden in Temperatur unter 45˚C in einem Melangeur conchiert.

Aktuell führen wir die Bolivia wild, Peru und Madagaskar Schokoladen mit jeweils zirka 70% Kakaoanteil im Sortiment. Zudem ergänzen die Kokosmilch Schokolade und Cacao & Dates Bean-to-Bar Schokolade, welche mit Dattelsüsse gesüsst wird, das Angebot.

Diese bean-to-Bar Schokolade wird von unserem sozialen Logistiker (Stiftung Ancora-Meilestei) in Wetzikon hergestellt. In der professionell eingerichteten und zertifizierten Manufaktur führt Chocolatier Emanuel und sein Team alle Prozessschritte selbst durch, von der Verarbeitung der Kakaobohnen bis zur Verpackung der Tafeln. Mit dem Kauf der Schokolade ermöglichst du die Ausbildung und berufliche Integration von Klienten der Stiftung.
