SAM bean-to-bar chocolate 60% with cocoa nibs and Timut pepper

The cocoa nibs give this special chocolate creation a slightly crunchy texture. The icing on the cake is the Timut pepper, which, as you might expect, tastes spicy at first and then develops a delicious grapefruit flavour.

This bean-to-bar chocolate is produced by our social logistics partner (theAncora-MeilesteiFoundation) in Wetzikon. 

In the professionally equipped and certified workshop, chocolatier Emanuel and his team carry out every stage of the process themselves, from processing the cocoa beans to packaging the bars. By purchasing this chocolate, you are supporting the training and professional integration of the foundation’s clients.

Origin and production

High-quality organic cocoa beans from Madagascar form the basis of this 60% chocolate. They are roasted, hulled and then processed in a melangeur for several hours to create a fine cocoa mass. This mass is then tempered. During tempering, the paste is heated to around 42°C and then cooled to between 26°C and 28°C. This process gives the triglycerides contained in the cocoa butter the desired, stable structure. This makes the chocolate crisp and gives it a beautiful sheen.

Cocoa mass, raw cane sugar, cocoa butter, cocoa nibs 5%, Timut pepper 0.5%.

All ingredients are organically grown.
