Açai berry ice cream (for 2-3 servings)
Ingredients:
Fresh or frozen berries in winter
2 frozen bananas
1 handful of cashew nuts
2 tbsp açai powder
½ tsp vanilla powder
2 tbsp coconut sugar or yacon syrup
4 tbsp water
Preparation:
Soak the cashew nuts in water until soft. Puree all ingredients in a blender. Pour into bowls and serve with fresh berries. If you use frozen berries in winter, warm them up briefly in a small pan and some water.
Açai Oat Energy Balls
Ingredients:
1/4 cup almond puree
1/2 cup dates, pitted and soaked
1 pinch of vanilla, 1 pinch of cinnamon, 1 pinch of cardamom
½ cup oatmeal
2 tbsp açai powder
1 tbsp lucuma powder
1 tbsp coconut sugar or yacon syrup, as needed
Preparation:
Puree the dates in a blender, then mix in the remaining ingredients, let the mixture cool in the fridge and shape into balls. Store in the fridge
Blueberry Açai Confiture
Ingredients:
250g blueberries
2/3 cups coconut sugar
1 tablespoon lemon juice
1 tbsp baobab
3 tablespoons acai powder
preparation
Simmer all the ingredients except for the açai powder in a pan for 20 minutes, then partially puree with a hand blender. Then stir in the açai and fill into a screw-top glass. Store in the fridge. Also possible as a raw food variant, without simmering and replacing coconut sugar with thick Yacon juice.
