Da sich der Import des Maya Gewürzkakaos (infolge der massiv gestiegenen Transportkosten) nicht mehr gerechnet hatte, haben wir in der Schweiz unseren eigenen Gewürzkakao produzieren lassen. Die Kombination aus hochwertigem Kakao und leicht scharfen Gewürzen machen dieses Kakaopulver zum grossen Erlebnis.

Der neue Gewürzkakao hat im Vergleich zum alten ein intensiveres Kakao-Aroma und ist etwas herber, leicht schärfer, schokoladiger, weniger süss, ohne Zimt-Aroma. Die braune Farbe des neuen Gewürzkakao ist etwas heller.

Was ist Gewürzkakao?

Unser Bio Gewürzkakao ist ein grobkörniges Schokoladenpulver, bestehend aus Kakaomasse und unserem Criollo Kakaopulver. Es wird mit Rohrohrzucker gesüsst und mit einer leicht scharfen Gewürzmischung aromatisiert.

Lokale und soziale Produktion

Der Gewürzkakao wird von den Chocolatiers der Stiftung Ancora-Meilestei in Wetzikon nach einem speziellen Verfahren produziert, um die gewünschte Konsistenz zu erreichen.

Zutaten

Kakaomasse 40%, Rohrohrzucker 30%, Kakaopulver 25%, Gewürzmischung 5% (Kakaoschalen, Paprika edelsüss, Rohrzucker, Chili, Zimt, Bourbon-Vanille, Tonkabohnen). Sämtliche Zutaten sind Bio-zertifiziert.

Zubereitung

Mische den Gewürzkakao in lauwarme Pflanzendrinks, in Smoothies, Protein-Shakes und ins Müesli. Passt auch geschmolzen als Dessert-Topping. Wenn du Kokosaroma gerne hast, dann wird dir Kokosmilch mit Gewürzkakao wunderbar schmecken.

Tipp: Damit der Gewürzkakao auch in kalten Getränken gut emulgiert (sich verbindet), einen Schwingbesen oder Milchaufschäumer-Stab verwenden. So kann auch ein schöner Schaum hergestellt werden.

Für einen intensiven Kakao-Genuss mische 5 Teelöffel (ca. 15g) mit 1 Tasse heissem Wasser oder Pflanzendrink.

Wer den Kakao für eine Zeremonie nutzen möchte, verwendet 40-50g auf ca. 2-3dl Wasser oder Pflanzendrink. Bei dieser Menge werden von vielen Menschen euphorische Gefühle wahrgenommen. Diese konzentrierte Form wurde bereits von den Maya-Schamanen vor tausenden von Jahren als «Göttergetränk» angewendet.

Carob powder - from the pods of the carob tree Carob is a legume that grows on the carob tree, a wild, evergreen tree native to the Mediterranean, and has been used as a sweetener and nutritious natural snack for thousands of years. Carob was well known to the ancient Greeks, who spread the seeds of this plant in Greece and Italy. Why consume carob powder? People who don't know much about carob think it's a healthy version of (high-sugar, high-fat) chocolate, but it's so much more. It was considered a gift from God by the Aztecs and was used not only as an offering but also as a means of payment. It is estimated that raw cacao contains more than 300 substances and is one of the foods with the most antioxidants. It enriches many dishes with a wonderful, sensual chocolate flavour and is also excellent for skin care. What makes our Cacao Butter Criollo Chips special? Our cacao butter is 100% pure and of raw food quality. Grown in Peru. No chemicals are used either in cultivation or processing. This cocoa butter is the pure, golden oil from cacao beans. Our cacao butter is made from the particularly fine and rare Criollo cacao variety. Fine flavoured cacao varieties only account for 5-10% of global cacao production. They grow under similar, often almost natural conditions, as they do not tolerate direct sunlight and thrive alongside other tall rainforest trees. Forestero industrial cacao, on the other hand, is usually grown in monoculture plantations. Unlike conventional products, our cocoa butter is never heated above 37°C and therefore has the quality of raw butter.
