Vanilla is the fruit of a white orchid species that is originally native to Mexico and has spread to many tropical countries over time. Vanilla is now one of the most sought-after spices and is also known as the "queen of spices". The cultivation and processing of vanilla has always been labour-intensive, as much of the work has to be done by hand. In addition, the available areas are limited and demand is constantly increasing. As a result, vanilla is now one of the most expensive spices in the world.

Genuine bourbon vanilla powder from Madagascar has unfortunately become a rarity due to severe flooding in Madagascar in 2016 and 2017, which resulted in major crop failures and long-term damage to crops. You can find more information on this in the NZZ online article.

While the much cheaper synthetically produced vanillin consists of just one substance, the special flavour of real vanilla is a harmonious composition of almost 200 individual substances! Real vanilla therefore not only has a unique flavour and seductive aroma, it is also healthy. It has been regarded and cultivated by the peoples of Central America for centuries as a remarkable gift of nature, and the pharmacies of the 18th century stocked it as a health remedy in the form of powder, infusion and tincture.

Uses

With its unique spectrum of flavours, it can be used in a variety of ways for all sweet dishes, such as dessert sauces, ice cream, smoothies, pastries, compotes, jams, homemade chocolate and fruit bars. Also delicious in drinks such as cocoa, nut milk and herbal teas.

Low-fat cocoa powder with 10-12% cocoa butter content (100% natural) Update:Due to the cocoa shortage, we do not receive 100% Criollo powder from our supplier. The new batch contains 70% Criollo cocoa (previously 100%). The remaining 30% are Forastero, Trinitario and Nacional. They are also high quality, certified organic and from Peru. This is whyour cocoa powder is temporarily called "Cocoa Powder Peru". In comparison, it has a slightly more intense flavour and is slightly bitter, but also very tasty. Why cocoa powder? Cocoa has all the benefits of chocolate, but without the undesirable high sugar content and additives. As a reminder: milk chocolate only has a cocoa content of around 25%. It is obtained from unroasted, merely fermented cocoa beans. Gentle processing at low temperatures optimally preserves both nutrients and flavour. Gentle processing for maximum flavour To produce the powder, the fermented, unroasted fine flavoured cocoa beans are first ground. The resulting dark brown, viscous cocoa mass is cold-pressed to form a cake, from which the liquid, golden yellow cocoa butter slowly drains off. The remaining "cocoa press cake" is then dried, very finely ground and sieved. This process does not require any chemicals, additives or extraction solvents and produces a fine, soft powder with a full, wonderful chocolate flavour. Carob powder - from the pods of the carob tree Carob is a legume that grows on the carob tree, a wild, evergreen tree native to the Mediterranean, and has been used as a sweetener and nutritious natural snack for thousands of years. Carob was well known to the ancient Greeks, who spread the seeds of this plant in Greece and Italy. Why consume carob powder? People who don't know much about carob think it's a healthy version of (high-sugar, high-fat) chocolate, but it's so much more. We like to mix carob with raw cocoa for a sweet and healthy treat, because cocoa has a lot of magnesium and compared to cocoa, carob contains three times as much calcium, a third less calories and only 1% fat. Almond Butter Organic Soyana
Organic almond puree (almond paste) from Soyana in raw food quality Update: The Soyana almond puree from Italy is available again as normal and the 1kg versionof Naturkostbar's white almond puree remains in the range. Urs Hochstrasser, Swiss raw food pioneer, co-developed this white organic almond puree and has been using it in his raw food gourmet cuisine for over 20 years. Almond puree is sometimes also known as almond butter or almond butter. Properties of Soyana organic almond puree White almond purees are usually made from blanched almonds. The brown skin of the almond can be easily removed by briefly cooking it in boiling water. Soyana almond puree is one of the few in raw food quality and is never heated above 40° during production. Only selected organic Sicilian almonds are used for production. Almond puree is very nutritious, has a delicious almond flavour and a slightly sweet note. Due to its creamy consistency, it is not only suitable for smoothies & co. but can also be enjoyed as a snack. Almond puree contains lecithin (even more than eggs) and enables the emulsification (mixing) of fats and water. This is very important for the airy consistency of smoothies and sauces. Recommendations for use The almond puree is suitable in vegan cuisine instead of Dairy products for milkshakes, smoothies and soups Eggs for sauces, creams and desserts of all kinds (e.g. with carob powder). as well as for spreads. Tip 1: Mix3 tablespoons of almond puree with 5 litres of water to make a nutritious almond milk in no time at all. If you like it sweet, apple syrup, agave syrup and yacon syrup as well as carob powder are suitable for sweetening. Tip 2: Vegan royal sauce according to Urs Hochastrasser. Place 2-3 tablespoons of almond puree with the juice of a lemon and an orange and 1 litre of water in an open blender. Then, with the blender running, slowly pour in 2.5dl apricot kernel oil and 1dl water in between. You can experiment with the quantities of oil and water. The more oil, the firmer the consistency. Finally, season to taste. The royal sauce can be stored in the fridge for 1 week. Good best-before date We regularly order new batches from Soyana, which is why the best-before date of the almond puree is usually between 9 and 12 months.
