Organic almond puree (almond paste) from Soyana in raw food quality

Update: The Soyana almond puree from Italy is available again as normal and the 1kg versionof Naturkostbar's white almond puree remains in the range.

Urs Hochstrasser, Swiss raw food pioneer, co-developed this white organic almond puree and has been using it in his raw food gourmet cuisine for over 20 years. Almond puree is sometimes also known as almond butter or almond butter.

Properties of Soyana organic almond puree

White almond purees are usually made from blanched almonds. The brown skin of the almond can be easily removed by briefly cooking it in boiling water.

Soyana almond puree is one of the few in raw food quality and is never heated above 40° during production. Only selected organic Sicilian almonds are used for production.

Why eat almond puree?

Almond puree is very nutritious, has a delicious almond flavour and a slightly sweet note. Due to its creamy consistency, it is not only suitable for smoothies & co. but can also be enjoyed as a snack.

Almond puree contains lecithin (even more than eggs) and enables the emulsification (mixing) of fats and water. This is very important for the airy consistency of smoothies and sauces.

Recommendations for use

The almond puree is suitable in vegan cuisine instead of

  • Dairy products for milkshakes, smoothies and soups
  • Eggs for sauces, creams and desserts of all kinds (e.g. with carob powder).

as well as for spreads.

Tip 1: Mix3 tablespoons of almond puree with 5 litres of water to make a nutritious almond milk in no time at all. If you like it sweet, apple syrup, agave syrup and yacon syrup as well as carob powder are suitable for sweetening.

Tip 2: Vegan royal sauce according to Urs Hochastrasser. Place 2-3 tablespoons of almond puree with the juice of a lemon and an orange and 1 litre of water in an open blender. Then, with the blender running, slowly pour in 2.5dl apricot kernel oil and 1dl water in between. You can experiment with the quantities of oil and water. The more oil, the firmer the consistency. Finally, season to taste. The royal sauce can be stored in the fridge for 1 week.

Good best-before date

We regularly order new batches from Soyana, which is why the best-before date of the almond puree is usually between 9 and 12 months. It is therefore worth ordering at least 3 pieces, as we then offer a 5% quantity discount and free postage (from an order value of CHF 100).

Super Qualität und schnelle Lieferung

Ich verwende dieses Mandelpüree seit vielen Jahren, aufgrund der hohen Qualität und da es aus sizilianischen Bio-Mandeln hergestellt wird. Bestelle immer gleich 3 Stück, weil die Bestellung dann portofrei ist und noch 5% Mengenrabatt abgezogen werden. Die Lieferung mit der Post erfolgt stets sehr schnell.

Super Qualität und für vieles einsetzbar.

Wir nutzen das Mandelpürre für Milch und sind sehr zufrieden. Es ist eine gute Alternative zur Kuhmilch. Mache damit auch Salatsauce oder brauche sie für Glace. Die Qualität ist 1a und auch der prompte Service.

Organic white almond paste The aromatic almonds for this creamy almond paste come from the fertile region around Valencia in Spain. Every February, the blossoming almond trees enchant the region with their white and pink colours. When the almonds are ripe in autumn, they are dried in the sun with their hard outer shells. They are then cracked and peeled. Naturkostbar process the natural almond kernels in their factory in Uetendorf. A traditional stone mill transforms the almonds particularly gently and slowly into a creamy puree. Soyana Nama organic barley miso 250g - unpasteurised Unpasteurised organic barley miso from Soyana. Nama means highest quality according to traditional Japanese production methods. In the production of this miso, the soya beans are cooked and then fermented in wooden barrels for 2 years. During fermentation, nutrients are released and probiotic bacteria beneficial to the intestinal flora are formed; each gram contains several million bacteria. Sunflower Oil High Oleic Organic Soyana
Cold-pressed high-oleic organic sunflower oil from Soyana This certified organic high-oleic sunflower oil comes from specially cultivated sunflowers. It contains approx. 75% monounsaturated fatty acids and is therefore particularly suitable for heating and frying. Normal sunflower oil, on the other hand, contains only approx. 23% monounsaturated (omega-9 fatty acids), but around 60% polyunsaturated fatty acids. Safflower oil, tree nut oil, pumpkin seed oil and linseed oil also have a high proportion (>50%) of polyunsaturated fatty acids, so-called MUFS. These are essential omega-3 and omega-6 fatty acids, which the body needs to produce important endogenous substances. Essential means that our body cannot produce these fatty acids itself, which is why we need to consume 19g per day through our diet. The oils mentioned are basically healthy as long as they are not heated. This is because the MUFAs break down and toxic degradation products and free radicals are formed. Therefore, use high-oleic oils (also known as HO or HOLL), coconut oil (contains many saturated fatty acids) or frying butter for frying. It is not filtered, but left to cool for 1 day so that the lees can settle. The linseed oil is then bottled, taken to the warehouse and dispatched on the same day. There may be a small amount of sediment (slightly darker in colour) at the bottom of the bottles. This can be consumed without hesitation. Why is linseed oil so healthy? With approx. 50% alpha-linolenic acid/omega 3, linseed oil is one of the most potent suppliers of this important fatty acid. Just 1 tablespoon of linseed oil covers the daily requirement of 2g alpha-linolenic acid for an adult. Omega-3 fatty acids are of great importance for our metabolism. They are important building blocks of our cell membranes, have an anti-inflammatory effect, protect the cells against premature ageing and strengthen our immune defences. Linseed oil goes perfectly with cold and warm dishes such as salads, potatoes and muesli. It can also be enjoyed pure (1 tablespoon a day). Linseed oil is also suitable for external use on very dry skin. Freshly pressed linseed oil only for pre-orders Due to its sensitivity to heat and short shelf life, we do not keep linseed oil in stock, but only accept pre-orders from September to June, which are then dispatched once a month. During the warmer months, the oil is dispatched with cooling pads. On Monday morning, we place our order with Jakob Bachofner from the Oelerei. He presses the linseed oil on Monday. The freshly pressed organic linseed oil then has to rest for a day in the cold store for sedimentation (reduction of the lees). On Wednesday morning, it is bottled and I immediately take the bottles to my social logistician in Wetzikon. He will dispatch all orders (linseed oil with any other items ordered) on Wednesday with Post Pack Priority (without CHF 2 surcharge), so that you should receive your order on Thursday of the same week. Please always store the linseed oil in the refrigerator, even before opening the bottle for the first time. This slows down the very rapid oxidation of linseed oil. Our linseed oil is specially bottled in dark purple miron glass to protect it from sunlight and the associated premature oxidation. There are 2 ways to further extend the shelf life: Very modern refrigerators sometimes have a 0-degree zone. Stored there, the linseed oil will keep for about a month longer or you can also freeze it, which extends the shelf life to 6 months. Once opened, the bottle should be consumed within 3-4 weeks. Important notes Linseed oil and camelina oil are not the same thing. While linseed oil is pressed from linseed, camelina oil comes from camelina. Camelina oil has a longer shelf life, but at approx. 35% has a lower alpha-linolenic acid/omega 3 content. Cold-pressed oils (except coconut oil) are sensitive to heat and are therefore mainly suitable for cold cooking. Toxic compounds can form when heated to high temperatures, e.g. frying. Change of bottles Due to the massive price increase of the Mironglas (approx. 40%) and the new closure system with plastic ball, Jakob Bachofner has been looking for alternatives. For the standard edible oil glass bottles, it would have been necessary to purchase a capping machine, which would not have been proportionate for the small quantities produced by the Oelerei in Fehraltorf. Now a BPA-free tinplate bottle in a black matt design from Germany has become the best alternative, see picture above left. The advantages over glass are the lower weight and lower energy consumption in production. In addition, the risk of breakage is significantly lower, which is why less stuffing material is required for shipping. Tinplate has a high recycling rate as it is collected together with aluminium at all material collection points. All other packaging options would have resulted in price increases. We are pleased that we are able to offer linseed oil at the existing prices at a time when almost everything is becoming more expensive. The new 500ml bottles will be introduced in December. With the December pressing, we will also be offering 250ml bottles for CHF 20. This size was requested several times and should be a good compromise between 100ml and 500ml. There are currently still enough of the 100ml Mironglas bottles in stock, which is why the changeover will not take place until spring 2024. Depending on the seed, it contains 10-30% linoleic acid (omega-6 fatty acid) and 40-70% alpha-linolenic acid (omega-3 fatty acid), which can be converted by the body into DHA (docosahexaenoic acid) and EPA (eicosapentaenoic acid). Further use of the Miron bottles In principle, the bottles made from the valuable Miron glass can be rinsed out and reused as desired. We recommend leaving the labels on, as they do not come off easily even after a wash in the dishwasher or with petrol. The labels are not water-soluble because the bottles are stored in the refrigerator. Condensation forms when they are removed, which would then remove the label. In addition, a paper label would quickly look dirty if a drop of oil ran down it. According to feedback from the producer, the best way to remove the labels is with orange oil. Local producer Jakob Bachofner from Oelerei in Fehraltorf has been pressing our linseed oil once a month since summer 2021. In addition to the excellent quality, we appreciate the short distance of just 10 kilometres between the oil production facility and our warehouse in Wetzikon. This enables us to send you the linseed oil on the day of bottling (Wednesdays). It couldn't be quicker, unless you select "Pick up at warehouse" as the dispatch method and collect the linseed oil from the warehouse in person on Wednesday afternoons from 3.30 pm.
