Organic cocoa liquor (cocoa paste) of the premium Criollo variety as crisps (100% natural)

Cocoa liquor crisps (also known as cocoa paste or cocoa liquor) are much easier to use/dose than the broken pieces previously available due to their consistent size and are also suitable as a sugar-free chocolate substitute.

What makes our cocoa paste special?

Fine cocoa variety Gran Cru Criollo

Fine flavoured cocoa varieties only account for 5-10% of global cocoa production. They grow under similar, often almost natural conditions, as they do not tolerate direct sunlight and thrive alongside other tall rainforest trees. Forastero industrial cocoa, on the other hand, is usually grown in monoculture plantations.

As the name suggests, fine flavoured cocoa tastes better, finer and less bitter than consumer cocoa, as it still contains all of the cocoa butter (approx. 55%), just like cocoa nibs. Criollo cocoa beans are slightly fermented and therefore develop more of their typical cocoa flavour.

Why consume cocoa?

The cocoa bean is an impressive food given to us by Mother Nature. It was considered a gift from God by the Aztecs and was used not only as an offering but also as a means of payment.

It has been determined that raw cocoa contains around 300 substances and is one of the foods with the highest antioxidant content! Cocoa can therefore make a significant contribution to protecting our cells from free radicals and premature ageing.

Cocoa has the highest magnesium content of all foods. Magnesium is important for the heart and brain, for calming and relaxing nerves and muscles and for building bones and cartilage. Together with other active ingredients, cocoa is an ideal brain food and promotes mental alertness and concentration.

Cocoa beans contain a combination of substances that have a positive effect on our mind and trigger feelings of well-being and joy.

What is cocoa mass used for?

Cocoa liquor is excellent for use in all chocolate recipes. Mix cocoa liquor into smoothies or add it to ice cream, fruit salad, muesli and desserts. Ideal in combination with cocoa butter for fine chocolate creations.

Organic spiced cocoa - produced in Switzerland As it was no longer worth importing Mayan spiced cocoa (due to the massive increase in transport costs), we had our own spiced cocoa produced in Switzerland. The combination of high-quality cocoa and slightly hot spices make this cocoa powder a great experience. The new spiced cocoa has a more intense cocoa flavour than the old one and is slightly more bitter, slightly spicier, more chocolaty, less sweet and has no cinnamon flavour. The brown colour of the new spiced cocoa is slightly lighter. What is spiced cocoa? Our organic spiced cocoa is a coarse-grained chocolate powder consisting of cocoa mass and our Criollo cocoa powder. It is sweetened with raw cane sugar and flavoured with a slightly spicy blend of spices. Local and social production The spiced cocoa is produced by the chocolatiers of the Ancora-Meilestei Foundation in Wetzikon using a special process to achieve the desired consistency. Ingredients Cocoa mass 40%, raw cane sugar 30%, cocoa powder 25%, spice mix 5% (cocoa shells, sweet paprika, cane sugar, chilli, cinnamon, bourbon vanilla, tonka beans). All ingredients are certified organic. Preparation Mix the spiced cocoa into lukewarm plant-based drinks, smoothies, protein shakes and muesli. It also goes well melted as a dessert topping. If you like coconut flavour, then coconut milk with spiced cocoa will taste wonderful. Tip: To ensure that the spiced cocoa emulsifies (combines) well in cold drinks, use a whisk or milk frother wand. This will also produce a nice foam. Agave syrup is a delicious sweetener obtained from the sap inside the agave plant, which is at least eight years old. Traditionally, Mexicans collected the sweet sap ("aguamiel") from various agaves to make sweeteners and special drinks for celebrations. Why buy agave syrup? Agave syrup is a vegan alternative to honey and has a pleasant flavour, like a mixture of honey and maple syrup. It can be used as a versatile sweetener. Only very gently processed agave syrup like ours has a low glycaemic index and is only absorbed slowly into the bloodstream. It is therefore particularly recommended for people with sugar sensitivities. What makes our agave syrup special? Most conventional agave syrups, often also those from organic cultivation, are made from 3-6 different types of agave and have been heated and pasteurised, as the agave juice spoils quickly after it has been extracted The healthier polysaccharides (mainly in the form of inulin) are converted into simple sugars. An ideal sweetener for the health-conscious, diet-conscious and diabetics. The special thing about yacon is the quality of its sugar, which is predominantly in the form of oligofructose (or fructooligosaccharides). Oligofructose cannot be utilised by the digestive enzymes and therefore causes hardly any calories and is gentle on the blood sugar level. It is obtained from unroasted, merely fermented cocoa beans. Gentle processing at low temperatures optimally preserves both nutrients and flavour. Gentle processing for maximum flavour To produce the powder, the fermented, unroasted fine flavoured cocoa beans are first ground. The resulting dark brown, viscous cocoa mass is cold-pressed to form a cake, from which the liquid, golden yellow cocoa butter slowly drains off. The remaining "cocoa press cake" is then dried, very finely ground and sieved. This process does not require any chemicals, additives or extraction solvents and produces a fine, soft powder with a full, wonderful chocolate flavour.
