Yacon Syrup Organic - Delicious, prebiotic sweetener
Yacon is a tuber, which grows in the high mountain valleys of the Andes. It has a dense root system, which is loaded with minerals, vitamins and other complex nutrients. The freshly pressed juice of the root is a gift of nature and has been enjoyed by the Andean people for centuries.
Though packed with sugar, its principal appeal to the health conscious is that the sugar is mainly oligofructose (fructooligasacharides/FOS) which cannot be absorbed by the body. This means Yacon is naturally low-calorie and its sugars do not raise blood glucose levels. In addition, oligofructose is a prebiotic food, it aids digestion by promoting beneficial bacteria in the colon.

Yacon syrup tastes delicious, has half the calories of other favourite sweeteners like honey and agave syrup and very little impact on blood sugar levels. It is much less glycaemic than honey, agave or maple syrup.
Yacon's sugars, which pass through the digestive track without being metabolised, however, are metabolised by the bifidobacteria in the large intestine and contribute to improved digestion and absorption of vitamins. Certain modern health products, such as bio-yogurts, have oligofructose added to achieve the same effect, but Yacon already has that quality naturally.

Yacon syrup can be used as a sweetener in many ways. We like to use it in smoothies and it goes really well with desserts containing lucuma and banana. For salad dressings we like to mix the syrup with vinegar, as a substitute for balsamic vinegar, which usually contains a lot of sugar.
The sweetness is less than of sugar, honey or agave syrup. To support a healthy gut flora it is good to have one teaspoon daily.
