Mesquite powder: the healthy sweetener from the desert
Mesquite was a traditional staple food of the indigenous peoples of the arid regions of North and South America. Today, mesquite powder has been rediscovered as a nutritious and delicious food and is used all over the world.
Why consume mesquite powder?
Mesquite is a delicious ingredient for cakes, desserts, smoothies, ice cream and homemade bread. It tastes particularly good in combination with cocoa and maca.
Mesquite has a sweet, malty taste similar to carob, but with a caramel flavour. The full-bodied flavour and aroma go well with vanilla and chocolate and it adds a delicious maltiness to sweet treats.
Mesquite mixes well with nut milks, is an excellent ingredient in smoothies and is fantastic sprinkled on ice cream. An exquisite malty chocolate can be made with it and mesquite can also be used as a flavoured partial substitute for flour. It is a wonderful food to experiment with.

What makes our organic mesquite powder special?
Our mesquite powder is made from the whole pods of the mesquite tree, which are gently dried and then processed into a flour or powder. As there is no guarantee that the temperature during drying will always remain below 42°C, we do not use the term raw food quality.
For whom is the consumption of mesquite powder particularly suitable?
- People with diabetes or blood sugar fluctuations: Mesquite has a low glycaemic index, which means that it causes blood sugar levels to rise only slowly. This can be helpful for people with diabetes or other blood sugar problems.

Yacon is grown in the high mountain valleys of the Andes and has a dense root system that is bursting with minerals, vitamins and complex vital substances. The freshly squeezed juice of the root is a gift of nature and has been savoured by the Andean peoples for centuries.
Why consume yacon syrup?
An ideal sweetener for the health-conscious, diet-conscious and diabetics.
The special thing about yacon is the quality of its sugar, which is predominantly in the form of oligofructose (or fructooligosaccharides). Oligofructose cannot be utilised by the digestive enzymes and therefore causes hardly any calories and is gentle on the blood sugar level.
Yacon tastes delicious and has half the calories of honey, for example. Yacon syrup is also significantly less glycaemic than honey, agave syrup or maple syrup.
The oligofructose in yacon also supports the beneficial bacteria in the large intestine and thus improves the digestion and absorption of nutrients. The indigestible sugar thus serves as prebiotic food for the beneficial bacteria.
What makes our yacon syrup special?
Our yacon syrup comes from traditional varieties from the Peruvian Andes and is 100% natural, grown without pesticides or agrochemicals. It is produced at low temperatures, which guarantees that the syrup retains a very high quality of nutrients and enzymes.
This yacon syrup is thickened from yacon juice in a special low-pressure process at low temperatures of 45°C. As yacon syrup can only be kept for a relatively short time without pasteurisation and additives, it is pasteurised at 70°C for 3 minutes.
Our yacon syrup is therefore not raw, but is processed very gently, which means that the valuable nutrients and enzymes of the root are largely preserved.
How to use yacon syrup?
Yacon syrup is a versatile sweetener. It can be used to sweeten desserts, drinks and smoothies. For salad dressings, we like to mix the syrup with vinegar as a substitute for balsamic vinegar, which usually contains a lot of sugar.
The sweetening power of the syrup is less than that of sugar, honey or agave syrup. To support a healthy intestinal flora, 1 teaspoon a day is sufficient.
For a longer shelf life, we recommend storing the yacon syrup in the fridge.

The lucuma pulp is dried in a solar drying plant at low temperatures in accordance with raw food quality standards, then gently ground and sieved.
Although lucuma also grows in other tropical regions, the flavour of the fruit that grows in the Peruvian highlands is rated even better. This is where our lucuma powder comes from. The beautiful, dark yellow powder has a flavour reminiscent of maple syrup and cashews.
Tips for use
Lucuma powder is an extremely versatile and tasty ingredient that works well in ice creams, baby food, yoghurts, cakes, chocolate and desserts and can be used for lucuma mousse, pudding or parfait. It is ideal as a sweet flour for pies, cakes and pastries and tastes delicious in smoothies, nut milks and other drinks.
The powder produces a rich, creamy consistency and transforms your raw food creations into a heavenly gourmet treat! We mostly use it in sweet dishes, but we have been told that it also tastes great in savoury dishes.
Just like maca, lucuma helps to combine and emulsify fats and oils with sugar and polysaccharides. For example, lucuma is ideal as an ingredient for a dish or drink with cocoa nibs (50% fat) and yacon root syrup (polysaccharides). It combines cocoa and yacon in flavour and consistency. What is agave?
The agave is a cactus-like plant from Mexico. Agave syrup is a delicious sweetener obtained from the sap inside the agave plant, which is at least eight years old.
Traditionally, Mexicans collected the sweet sap ("aguamiel") from various agaves to make sweeteners and special drinks for celebrations.
Why buy agave syrup?
Agave syrup is a vegan alternative to honey and has a pleasant flavour, like a mixture of honey and maple syrup. It can be used as a versatile sweetener.
Only very gently processed agave syrup like ours has a low glycaemic index and is only absorbed slowly into the bloodstream. It is therefore particularly recommended for people with sugar sensitivities.
What makes our agave syrup special?
Most conventional agave syrups, often also those from organic cultivation, are made from 3-6 different types of agave and have been heated and pasteurised, as the agave juice spoils quickly after it has been extracted The healthier polysaccharides (mainly in the form of inulin) are converted into simple sugars. They have thus lost a large proportion of their nutrients!
Our agave syrup is obtained exclusively from the Salmiana agave, is processed very gently and at low temperatures and is therefore of the best quality available on the market.
No pesticides or other agrochemicals are used in cultivation. The thick juice is produced in special vacuum containers in which the water it contains is vaporised at very low temperatures.
The valuable vitamins, minerals and enzymes are thus largely preserved and made available to our bodies. Because our agave syrup is 100% natural, it has a stronger flavour and a darker colour than commercially available thick juices.
How to use it in your daily diet?
Agave syrup is characterised by a high, neutral sweetening power. It enhances the flavour and is easily soluble in hot and cold food and drinks.
It is ideal for baked goods and, due to its low tendency to crystallise, for making jams and jellies.

What makes our xylitol birch sugar special?
We have tried a number of natural sweeteners over the years and after discovering xylitol, it has become one of our favourite sweeteners.

Originally, xylitol only came from birch bark. However, scientists in China found a way to extract xylitol from maize glucose. The problem here is that large quantities of pesticides are often used in the cultivation of maize and the soil is damaged.
How is birch sugar produced?
Xylitol is produced by the hydrogenation of xylose, which converts the sugar into a primary alcohol. This sugar alcohol, however, has nothing to do with ordinary alcohol. Xylitol occurs naturally in tree bark, but also in some types of fruit and vegetables. As birch bark is traditionally used for this purpose in Finland, the name birch sugar has also become established.
Size variants
Xylitol birch sugar is available in two sizes. In the practical 500g bag for CHF 11 and in the 1kg economy price bag for CHF 17.50. As is usual with all SamaraNatura products, we grant a 5% discount on quantities of 3 or more bags.
Consumption recommendations
As birch sugar has practically no flavour of its own, it is very suitable for sweetening tea and coffee. Other sweeteners such as agave syrup or yacon syrup often have a caramel flavour, which makes them more suitable for creams and desserts.
However, birch sugar is not suitable for yeast baked goods, as yeast cannot metabolise xylitol.
Xylitol belongs to the class of sugar alcohols that can have a laxative effect if consumed in excess. It is best to start with a small amount of 1 tablespoon per day so that the body can adjust to the new food and then slowly increase this amount.
Warning: Xylitol is toxic to dogs as it causes rapid drops in blood sugar levels and seizures.
Baking with xylitol
For homemade chocolate and raw cakes, we recommend grinding the crystals into a fine powder (powdered sugar) (using a blender or coffee grinder). This prevents sugar lumps from forming.

What makes our yellow maca powder special and where is it produced?
Our pure yellow maca powder is made from 100% natural maca roots from controlled organic cultivation, produced under strict production standards and quality controls. They all come from altitudes of over 4000 metres above sea level in the Junín region of Peru.
Our suppliers work together with small farmers. In doing so, they create jobs for the local population and advise the small entrepreneurs by offering training and financial support. This is a means of raising the standard of living of small farmers and at the same time increasing their crop yields.
How to use yellow maca powder in everyday life?
Maca has a unique flavour and can be added to many different dishes. Some people find the flavour of maca powder somewhat reminiscent of caramel with a peppery note. Maca powder can be stirred into rice, nut or hemp milk, for example, or simply mixed into muesli. Mix maca powder with water, milk of your choice or add it to juice, smoothies, muesli or raw desserts. Maca is also a good binding agent for soups and therefore a tasty addition. It is advisable to start with a small amount of ½ tsp per day and increase up to 1-2 tbsp per day. Unlike soya products, Mexican yam and linseed, maca does not contain hormones.
Note: A common misconception about superfoods and herbs is that there is a standard amount to consume. In general, the usual recommended daily intake for most superfoods, including maca, is between 1 tsp and 3 tbsp per day, divided into two or three doses. It is best to start with 1 tsp per day and adjust the amount to your personal needs.

Some palm sugars on the market are also blended with cane sugar and other malt-based ingredients. Soyana produces the organic apple syrup in raw food quality from 100% Swiss organic apples according to Urs' strict guidelines. Gentle thickening at below 43° C preserves many enzymes and nutrients (in contrast to many other sweeteners that are pasteurised).
Use of organic apple syrup
With its fruity apple flavour, it is ideal for sweetening smoothies, raw food desserts and cakes.
In combination with tart or malty dry powders such as cocoa and maca, we recommend using caramelised agave syrup (raw food) or yacon syrup (not raw food) for reasons of flavour.
