Diese bean-to-bar (von der Bohne zur Tafel) Schokolade wird von unserem sozialen Logistiker (Stiftung Ancora-Meilestei) in Wetzikon hergestellt. 

In der professionell eingerichteten und zertifizierten Manufaktur führt Chocolatier Emanuel und sein Team alle Prozessschritte selbst durch, von der Verarbeitung der Kakaobohnen bis zur Verpackung der Tafeln. Mit dem Kauf der Schokolade ermöglichst du die Ausbildung und berufliche Integration von Klienten der Stiftung.

Herkunft und Herstellung

Die hochwertigen Bio Kakaobohnen sind die Basis dieser 70% Schokolade. Sie werden geröstet, geschält und danach im Melangeur während mehreren Stunden zu einer feinen Kakaomasse verarbeitet. Diese Masse wird anschliessend temperiert. Beim Temperieren wird die Masse auf ca. 42° C erwärmt und danach auf 26° bis 28° C abgekühlt. Durch diesen Prozess erhalten die in der Kakaobutter enthaltenen Triglyceride die gewünschte, stabile Struktur. Das macht die Schokolade knackig und verleiht ihr einen schönen Glanz.
