Bolivia wild 100% Cacao Dates bean-to-bar chocolate from Naturkostbar

Intense and long-lasting, yet surprisingly mild and creamy smooth. Packaging material 100% plastic-free - sustainable cellulose from PEFC-certified forestry.

This handmade bean-to-bar chocolate is produced by Naturkostbar in Uetendorf near Thun. Wild organic cocoa beans are gently stone-ground. This slow and gentle process allows the Naturkostbar chocolatiers to extract the wonderful flavour from the cocoa beans and preserve many nutrients and vital substances. The mass is poured 100% pure (without any additives) into the chocolate moulds.

Cocoa content 100%.

Variety & origin

The fine Criollo cocoa beans from the humid tropical region of San Martin, Peru. A local co-operative grows the fine flavoured cocoa along the Huallaga River. This cooperative operates according to ethical principles and favours biodiversity to protect the environment.

The ripe beans are harvested carefully, fermented in stages and dried without direct sunlight. This allows the unique flavours of these Criollo cocoa beans to develop.

Hazelnut pralines from Naturkostbar - handmade in Switzerland The raw hazelnuts from Piedmont and the cocoa beans from mixed cultures merge with a few other high-quality ingredients to create these tempting pralines - a wonderful symbiosis of flavours. The only ingredients used are hazelnut butter, ground cocoa beans, coconut blossom sugar, chopped hazelnuts and vanilla. All ingredients come from controlled organic cultivation. The raw food content is 80%, only the coconut blossom sugar is not raw food due to the process. It all starts with the cocoa bean We process organically certified, high-quality and natural cocoa beans to make our hazelnut praline. The raw beans are lightly fermented and turned daily. Only the best beans meet our high quality standards. Fair trade or direct trade The availability of high-quality raw beans is very limited worldwide. We usually find them from small farmers who plant, cultivate and harvest the cocoa with great effort. In return, they receive a fair payment to ensure sustainability. Arrived in Steffisburg After arriving in Steffisburg, the raw cocoa beans are sorted and selected by hand. This ensures that only the best raw beans are processed in our production. Unroasted, the raw cocoa beans are separated from the shell. We use a special construction for this process to minimise the loss of this valuable raw material. The raw cocoa beans, separated from the shell, are then ground in our stone mill by huge granite stones at less than 42 degrees Celsius. Variety and origin Wild cocoa grows deep in the tropical rainforest in the province of Iténez in Bolivia. To protect the jungle with its ancient cocoa trees and animal inhabitants, Marcela and David founded a project in 2001: they showed local farmers living in poverty how they could harvest and ferment some of the valuable cocoa beans in harmony with nature.
