Bolivia wild bean-to-bar chocolate from Naturkostbar - handmade in Switzerland

This premium chocolate is an exclusive treat! Experience the authentic flavour of this fine cocoa variety from Bolivia.

The bean-to-bar chocolate is produced by Naturkostbar in Steffisburg near Thun in raw food quality from organic ingredients. The unique, fermented (unroasted) organic Bolivian cocoa beans are gently stone-ground for several hours.

Variety and origin

Wild cocoa grows deep in the tropical rainforest in the province of Iténez in Bolivia. To protect the jungle with its ancient cocoa trees and animal inhabitants, Marcela and David founded a project in 2001: they showed local farmers living in poverty how they could harvest and ferment some of the valuable cocoa beans in harmony with nature. The area where the cocoa grows is protected. It is not privately owned, but shared land of the local people. In 2006, Marcela and David had the area certified organic. Since then, they have received a lot of international encouragement and financial support. The project can now look forward to a secure future.

Chocolate Drops (Couverture) 68% Dark Organic Naturkostbar These drops aremade fromstone-ground Peruvian cocoa beans, coconut blossom sugar, cocoa butter from Peru andBourbon vanilla. The result is melt-in-the-mouth, aromatic chocolate drops with a harmonious sweetness. The cocoa content is 68 per cent and the sugar content is therefore 32 per cent.  The recipe deliberately avoids the use of soya lecithin as an emulsifier. Instead, a high proportion of high-quality cocoa butter is used. Origin and production Naturkostbar uses high-quality fine cocoa. The organic cocoa beans come from a Peruvian family-run business which is committed to sustainable and transparent cocoa farming and sources directly from local cocoa farmers. It pays the farmers fair prices, promotes organic farming and thus ensures a steady income for the local population. At the stone mill in Uetendorf, the cocoa beans are gently and slowly ground into a creamy paste. Together with the other ingredients, this forms the couverture drops. Uses The couverture is suitable for chocolate creations, bars and baked goods. The drops are easy to portion and are therefore ideal for moulding hollow figures, bars and other chocolate specialities, or for coating cakes, pralines, nuts, bars, etc. They are also delicious melted in warm nut milk or simply eaten straight from the bag as a snack. SAM bean-to-bar chocolate 80% This bean-to-bar chocolate is produced by our social logistics provider(Ancora-MeilesteiFoundation) in Wetzikon. In the professionally equipped and certified factory, chocolatier Emanuel and his team carry out all the process steps themselves, from processing the cocoa beans to packaging the bars. By purchasing the chocolate, you enable the training and professional integration of the foundation's clients. Origin and production The high-quality organic cocoa beans from Peru form the basis of this 80% chocolate. They are roasted, peeled and then processed in a melangeur for several hours to produce a fine cocoa paste. This mass is then tempered. During tempering, the mass is heated to approx. 42° C and then cooled to 26° to 28° C. This process gives the triglycerides contained in the cocoa butter the desired, stable structure. This makes the chocolate crunchy and gives it a beautiful lustre. Ingredients Cocoa mass, cane sugar, cocoa butter. All ingredients from organic production. The icing on the cake is the Timut pepper, which, as you might expect, tastes spicy at first and then develops a delicious grapefruit flavour. They are roasted, hulled and then processed in a melangeur for several hours to create a fine cocoa mass. This mass is then tempered. During tempering, the paste is heated to around 42°C and then cooled to between 26°C and 28°C. This process gives the triglycerides contained in the cocoa butter the desired, stable structure.
