Production

COCOA organic raw food chocolate is made from raw, unroasted cocoa beans = bean-to-bar. The cocoa beans are carefully ground and conched for over 60 hours at a temperature below 45˚C. Thanks to this gentle process, many healthy nutrients and the high antioxidant content are retained. The raw food chocolates contain no milk or its derivatives, such as lecithin, gluten, preservatives, flavourings and other "improvers". They are sweetened with coconut blossom sugar, which gives the chocolate its sweetness and a light caramel flavour. Coconut blossom sugar is also suitable as a natural sweetener because it has a low glycaemic index (GI 35). All ingredients come from certified organic cultivation.

The bean-to-bar chocolate is produced by Naturkostbar in Steffisburg near Thun in raw food quality from organic ingredients. The unique, fermented (unroasted) organic Bolivian cocoa beans are gently stone-ground for several hours. Variety and origin Wild cocoa grows deep in the tropical rainforest in the province of Iténez in Bolivia. To protect the jungle with its ancient cocoa trees and animal inhabitants, Marcela and David founded a project in 2001: they showed local farmers living in poverty how they could harvest and ferment some of the valuable cocoa beans in harmony with nature. The area where the cocoa grows is protected. It is not privately owned, but shared land of the local people. In 2006, Marcela and David had the area certified organic. Cacao & Dates bean-to-bar chocolate from Naturkostbar - handmade in Switzerland This premium chocolate is produced by Naturkostbar in Steffisburg near Thun in raw food quality from organic ingredients. The whole organic cocoa beans are gently stone-ground. The special thing about this creation is that it is sweetened with date sugar and not the usual coconut blossom sugar. Cocoa content 68%. Variety & origin The Criollo cocoa beans used come from the Pasco region in Peru. They give the chocolate a deep, earthy flavour. The date sweetener is obtained from sun-ripened Deglet Nour dates by gently drying them (below 42°C) and grinding them finely. Ingredients Cocoa beans, dates, cocoa butter, vanilla. All ingredients come from certified organic farming.
