The raw hazelnuts from Piedmont and the cocoa beans from mixed cultures merge with a few other high-quality ingredients to create these tempting pralines - a wonderful symbiosis of flavours.
The only ingredients used are hazelnut butter, ground cocoa beans, coconut blossom sugar, chopped hazelnuts and vanilla. All ingredients come from controlled organic cultivation. The raw food content is 80%, only the coconut blossom sugar is not raw food due to the process.
It all starts with the cocoa bean
We process organically certified, high-quality and natural cocoa beans to make our hazelnut praline. The raw beans are lightly fermented and turned daily. Only the best beans meet our high quality standards.
Fair trade or direct trade
The availability of high-quality raw beans is very limited worldwide. We usually find them from small farmers who plant, cultivate and harvest the cocoa with great effort. In return, they receive a fair payment to ensure sustainability.
Arrived in Steffisburg
After arriving in Steffisburg, the raw cocoa beans are sorted and selected by hand. This ensures that only the best raw beans are processed in our production.
Unroasted, the raw cocoa beans are separated from the shell. We use a special construction for this process to minimise the loss of this valuable raw material.
The raw cocoa beans, separated from the shell, are then ground in our stone mill by huge granite stones at less than 42 degrees Celsius. The result is a fine, raw cocoa mass, refined with Indonesian coconut blossom sugar, which can now be processed into our fine raw hazelnut pralines.
The refinement
This is where the unique raw food praline is created and given its individual flavour.
The stone-ground cocoa mass is mixed with creamy-soft hazelnut butter and supplemented with hazelnut flakes from Piedmont hazelnuts. These various steps are necessary for us to mature the hazelnut praline into a true masterpiece.
Please note: Our pralines and chocolate are made from 100% natural ingredients and we do not use any lecithins. For this reason, temperature fluctuations can cause a white layer to form on the surface of the products. This is a natural, crystalline change in the cocoa butter (the cocoa "sweats"), but has no effect on the flavour.
