The difference between wild and cultivated blueberries They look almost the same. Both are blue, round and taste great. But what are the differences between these two berries? Wild blueberries compared to cultivated blueberries have a higher vitamin content and a much higher anthocyanin content. Blueberry has become a universal name for blue-coloured berries of the Vaccinium genus, but it is good to know the difference between cultivated blueberries (often called American blueberries or blueberries) and wild blueberries (European blueberries). While cultivated blueberries are grown in various places around the world, wild blueberries grow on small bushes mainly in the northern parts of the Northern Hemisphere. The anthocyanins in the wild blueberry are visible to the eye as blue and red pigments in the flesh, which is juicy and bluish-purple in colour. The cultivated blueberry, on the other hand, has an almost transparent white and somewhat floury flesh. This dulse powder from Ireland is the simplest form for detox smoothies. It can also be used to flavour food. We also offer dulse flakes from Ireland and dulse leaves cut from Galicia (Spain). Atlantic dulse or lobster seaweed (Palmaria palmata) is a red algae, soft with a bite and a strong purple-red colour. It does not need to be cooked or soaked. This makes dulse a great snack or a flavourful topping for potato and lentil dishes as well as salads. In recent years, dulse has also become popular as an ingredient in detox smoothies. Due to its unique structure, it effectively combines fat and water. Sunflower lecithin contains the natural lecithin complex (mixture of various phospholipids) from sunflower seeds. Phospholipids are components of cell membranes, among other things, and play an important role in our entire metabolism. The yellow sunflower lecithin has a neutral flavour and is free from gluten and carriers. It is also generally GMO-free, as no genetic engineering is used in sunflower cultivation (in contrast to soya cultivation). Where and how is our sunflower lecithin powder produced? Our sunflower lecithin powder is produced in China, where the world's only CO2 de-oiling plant is located. The organic sunflower seeds are mechanically pressed to extract the oil. The lecithin is then isolated from the oil by CO2 extraction. The result is a powdered, de-oiled pure lecithin. This process completely dispenses with the use of solvents. Please always store the linseed oil in the refrigerator, even before opening the bottle for the first time. This slows down the very rapid oxidation of linseed oil. Our linseed oil is specially bottled in dark purple miron glass to protect it from sunlight and the associated premature oxidation. There are 2 ways to further extend the shelf life: Very modern refrigerators sometimes have a 0-degree zone. Stored there, the linseed oil will keep for about a month longer or you can also freeze it, which extends the shelf life to 6 months. Once opened, the bottle should be consumed within 3-4 weeks. Important notes Linseed oil and camelina oil are not the same thing. While linseed oil is pressed from linseed, camelina oil comes from camelina. Camelina oil has a longer shelf life, but at approx. 35% has a lower alpha-linolenic acid/omega 3 content. Cold-pressed oils (except coconut oil) are sensitive to heat and are therefore mainly suitable for cold cooking. Toxic compounds can form when heated to high temperatures, e.g. frying. Change of bottles Due to the massive price increase of the Mironglas (approx. 40%) and the new closure system with plastic ball, Jakob Bachofner has been looking for alternatives. For the standard edible oil glass bottles, it would have been necessary to purchase a capping machine, which would not have been reasonable for the small quantities produced by the oil factory in Fehraltorf. Now a BPA-free tinplate bottle in a black matt design from Germany has become the best alternative, see picture above left. The advantages over glass are the lower weight and lower energy consumption in production. In addition, the risk of breakage is significantly lower, which is why less stuffing material is required for shipping. Tinplate has a high recycling rate as it is collected together with aluminium at all material collection points. All other packaging options would have resulted in price increases. We are pleased that we are able to offer linseed oil at the existing prices at a time when almost everything is becoming more expensive. The new 500ml bottles will be introduced in December. Further use of the Miron bottles In principle, the bottles made from the valuable Miron glass can be rinsed out and reused as desired. We recommend leaving the labels on, as they do not come off easily even after a wash in the dishwasher or with petrol. The labels are not water-soluble because the bottles are stored in the refrigerator. Condensation forms when they are removed, which would then remove the label. In addition, a paper label would quickly look dirty if a drop of oil ran down it. According to feedback from the producer, the best way to remove the labels is with orange oil. Local producer Jakob Bachofner from Oelerei in Fehraltorf has been pressing our linseed oil once a month since summer 2021. In addition to the excellent quality, we appreciate the short distance of just 10 kilometres between the oil production facility and our warehouse in Wetzikon. Agave syrup is a delicious sweetener obtained from the sap inside the agave plant, which is at least eight years old. Traditionally, Mexicans collected the sweet sap ("aguamiel") from various agaves to make sweeteners and special drinks for celebrations. Why buy agave syrup? Agave syrup is a vegan alternative to honey and has a pleasant flavour, like a mixture of honey and maple syrup. It can be used as a versatile sweetener. Only very gently processed agave syrup like ours has a low glycaemic index and is only absorbed slowly into the bloodstream. It is therefore particularly recommended for people with sugar sensitivities. What makes our agave syrup special? Most conventional agave syrups, often also those from organic cultivation, are made from 3-6 different types of agave and have been heated and pasteurised, as the agave juice spoils quickly after it has been extracted The healthier polysaccharides (mainly in the form of inulin) are converted into simple sugars. Almond Butter Organic Soyana
Organic almond puree (almond paste) from Soyana in raw food quality Urs Hochstrasser, Swiss raw food pioneer, co-developed this white organic almond puree and has been using it in his raw food gourmet cuisine for over 20 years. Almond puree is sometimes also known as almond butter or almond butter. Properties of Soyana organic almond puree White almond purees are usually made from blanched almonds. The brown skin of the almond can be easily removed by briefly cooking it in boiling water. Soyana almond puree is one of the few in raw food quality and is never heated above 40° during production. Only selected organic Sicilian almonds are used for production. You can find out why this raw food almond puree is a blessing for us all in the YouTube video from Welt der Gesundheit with Urs Hochstrasser from 21.07.2022. Why eat almond puree? Almond puree is very nutritious, has a delicious almond flavour and a slightly sweet note. Due to its creamy consistency, it is not only suitable for smoothies & co. but can also be enjoyed as a snack. Almond puree contains lecithin (even more than eggs) and enables the emulsification (mixing) of fats and water. This is very important for the airy consistency of smoothies and sauces. Recommendations for use The almond puree is suitable in vegan cuisine instead of Dairy products for milkshakes, smoothies and soups Eggs for sauces, creams and desserts of all kinds (e.g. with carob powder). as well as for spreads. Kombu or finger kelp (Laminaria digitata) belongs to the genus of large brown algae (kelp) and grows in dense stands in shallow waters in calm, sheltered bays. Atlantic kombu is a thinner and more delicate version of Japanese kombu and can be used in exactly the same way - boiled in soups, fried until crispy or steamed and marinated. Kombu is ideal for all bouillons/stocks, where it improves the flavour and nutrient content. In particular, it is used for cooking beans, as it makes the beans more digestible and softer and reduces the cooking time. Kombu is particularly rich in calcium, potassium and magnesium and is also rich in B vitamins. It also contains mannitol, a sugar alcohol, which gives it a slightly sweet flavour and plenty of glutamic acid, an essential amino acid. Why we love kombu Kombu is a wonderful addition to all cooked preparations, especially beans or pulses and soups, by adding a few strips. Bean dishes in particular cook more quickly and are easier to digest. SamaraNatura Kombu Our sea vegetables are collected wild in the north-west of Ireland (Donegal) and harvested by hand. With the help of a cold air drying system, the seaweed is dried very gently and in raw food quality. Usage To enjoy kombu straight from the bag, tear it into strips. A salty, chewy snack that becomes sweeter in flavour over time. For cooking in general, it is best to soak kombu in water for 10 minutes and then simmer it with the dish for 40 minutes. The difference between wild and cultivated blueberries They look almost the same. Both are blue, round and taste great. But what are the differences between these two berries? Wild blueberries compared to cultivated blueberries have a higher vitamin content and a much higher anthocyanin content. Blueberry has become a universal name for blue-coloured berries of the Vaccinium genus, but it is good to know the difference between cultivated blueberries (often called American blueberries or blueberries) and wild blueberries (European blueberries). While cultivated blueberries are grown in various places around the world, wild blueberries grow on small bushes mainly in the northern parts of the Northern Hemisphere. The anthocyanins in the wild blueberry are visible to the eye as blue and red pigments in the flesh, which is juicy and bluish-purple in colour. The cultivated blueberry, on the other hand, has an almost transparent white and somewhat floury flesh. The wild blueberry has certainly been used since the 16th century, both the dried berries and the leaves. Brazil nuts, which come from the Bolivian rainforest, are highly valued for their crunchy texture and nutty flavour. They are one of the most characteristic nuts in the world in terms of flavour, appearance and impressive size. The sustainable, natural cultivation and harvest are fascinating: in the rainy season, the ripe pods fall from the trees before being collected by hand and cracked with machetes to reveal the nut kernels. PlantLife works closely with local cooperatives to conserve the rainforest by promoting sustainable farming methods. Paying a fair price for high-quality Brazil nuts is an incentive to save the rainforest from deforestation for agricultural purposes.
