Seaweed for salad Sea vegetables in general Sea vegetables are wild plants of the ocean that grow on coral reefs and rocky coasts, usually in salt water. Sea vegetables are enjoyed in many coastal regions around the world and enrich most dishes with flavour and nutrients. Sea vegetables contain almost all the minerals and trace elements that the sea has to offer! In general, sea vegetables are an excellent source of calcium, iodine and sodium, a very good source of folic acid and magnesium and a good source of iron, potassium, vitamin B2 and B5. They also contain vitamin K and trace elements such as selenium and chromium, which are often lacking in land vegetables due to depleted soils. When consumed regularly and over a long period of time, sea vegetables are said to help regulate metabolism and energy levels, stimulate the immune system, promote regular digestion, purify the blood and support the endocrine glands - especially the thyroid gland. Organic chia seeds (100% natural) - the little power seeds Chia seeds are an ancient superfood that was used by the Mayas, Aztecs and Incas as early as 3500 BC. They come from the desert plant Salvia hispanica, which grows in southern Mexico. Chia means starch in the Mayan language and was considered "running food" because messengers could run all day long with the help of these tiny seeds. Why consume organic chia seeds? Easy to use: Almost unnoticed, the body gets an extra dose of nutrients and can absorb food much better. At the same time, it gets an extra dose of energy and more well-being for mind and soul. Chia seeds contain many antioxidants that not only scavenge free radicals and highly reactive oxygen compounds. They are important for cell maintenance and function. The following ratio is excellent for growing sprouts: 1 level tsp rocket and 2 heaped tbsp alfalfa, whereby the seed quantity refers to the germination glass of sprout seeds. Our Spirulina Pacifica has been cultivated in Hawaii for over 25 years(video of a flight over the cultivation ponds in Kona, Hawaii) and is regarded as one of the highest quality spirulina in the world. Thanks to a special, oxygen-free drying system, nutrients and enzymes are largely preserved, unlike in other processes. Our spirulina is called Spirulina Pacifica and is a selected strain of Spirulina platensis that has developed over many years of cultivation in Hawaii. Spirulina Pacifica was intensively analysed by molecular biologists at the University of Hawaii. They identified new enzymes that were not found in other Spirulina platensis strains. Spirulina Pacifica is grown in open ponds 20 cm deep, a few hundred metres from the Pacific Ocean. To fill the ponds, fresh water is mixed with seawater from a depth of 600 metres, which is rich in minerals and trace elements. The other most important substances for cultivation in terms of quantity are food-grade baking powder (sodium bicarbonate) and carbon dioxide. Food-grade fertilisers are also used. Paddle wheels move the water to provide the algae with uniform sunlight for optimum growth conditions and nutrient uptake. In a special oxygen-free drying system, the spirulina is dried very gently so that more nutrients and enzymes are retained - e.g. over 40% more ß-carotene and over 75% more zeaxanthin - than is possible with conventional drying systems. Fluctuating green colour According to information from the producer in Hawaii, the colour can vary from batch to batch. Depending on the time of harvest (season) and other factors. Cold-pressed high-oleic organic sunflower oil from Soyana This certified organic high-oleic sunflower oil comes from specially cultivated sunflowers. It contains approx. 75% monounsaturated fatty acids and is therefore particularly suitable for heating and frying. Normal sunflower oil, on the other hand, contains only approx. 23% monounsaturated (omega-9 fatty acids), but around 60% polyunsaturated fatty acids. Safflower oil, tree nut oil, pumpkin seed oil and linseed oil also have a high proportion (>50%) of polyunsaturated fatty acids, so-called MUFS. These are essential omega-3 and omega-6 fatty acids, which the body needs to produce important endogenous substances. Ein Klassiker darunter ist selbstverständlich das Kurkuma-Pulver. Das Gewürz, das in der Ayurvedischen Ernährung vielseitige Anwendung findet, sieht auf den ersten Blick dem Curry sehr ähnlich und wird auch gerne zu Curry-Rezepten verwendet. Darüber hinaus wird es in Suppen, Aufläufen und Reisspeisen ebenso gerne verwendet wie auch in Smoothies. Ein in unseren Breitengraden noch weniger bekanntes Nahrungs- und Würzmittel in Pulverform ist hingegen Mesquite. DasMesquite-Pulver findet in der traditionellen Küche nord- und südamerikanischer Ureinwohner-Völker Anwendung und eignet sich perfekt als gesundes Süssungsmittel. Öle zum Verfeinern und Abschmecken
Perfekt zur Zubereitung von Rohkost wie etwa für Salate eignen sich wirklich kaltgepresste Öle. Die Öle im Shop von SamaraNatura sind alle kalt gepresst und aus biologischen Samen. Durch die schonende Gewinnung bleiben die natürlichen Aromen, Vitamine und die Fettsäuren optimal erhalten. Einige unserer Öle werden darüber hinaus aus Schweizer Ölsamen hergestellt wie etwa das kaltgepresste Schweizer Bio-Hanföl oder das Leindotteröl. Kaltgepresste Öle sind hitzeempfindlich. Bei starkem Erhitzen, z.B. Braten, können giftige Verbindungen entstehen. Das Gewürz, das in der Ayurvedischen Ernährung vielseitige Anwendung findet, sieht auf den ersten Blick dem Curry sehr ähnlich und wird auch gerne zu Curry-Rezepten verwendet. Darüber hinaus wird es in Suppen, Aufläufen und Reisspeisen ebenso gerne verwendet wie auch in Smoothies. Ein in unseren Breitengraden noch weniger bekanntes Nahrungs- und Würzmittel in Pulverform ist hingegen Mesquite. DasMesquite-Pulver findet in der traditionellen Küche nord- und südamerikanischer Ureinwohner-Völker Anwendung und eignet sich perfekt als gesundes Süssungsmittel. Mit seinem relativ hohen Proteingehalt sowie vielen Mineralstoffen wie Eisen, Kalzium, Magnesium, Eisen und Zink versorgt es den Körper mit wichtigen Nährstoffen und fasziniert gleichzeitig durch einen besonderen, Caramel ähnlichen Geschmack.
Öle zum Verfeinern und Abschmecken
Perfekt zur Zubereitung von Rohkost wie etwa für Salate eignen sich wirklich kaltgepresste Öle. Die Öle im Shop von SamaraNatura sind alle kalt gepresst und aus biologischen Samen. Durch die schonende Gewinnung bleiben die natürlichen Aromen, Vitamine und die Fettsäuren optimal erhalten. Einige unserer Öle werden darüber hinaus aus Schweizer Ölsamen hergestellt wie etwa das kaltgepresste Schweizer Bio-Hanföl oder das Leindotteröl. Kaltgepresste Öle sind hitzeempfindlich. Bei starkem Erhitzen, z.B. Braten, können giftige Verbindungen entstehen. Eine der wenigen Ausnahmen ist das Kokosöl, welches vorwiegend aus gesättigten Fettsäuren besteht sowie das High-Oleic Bio Sonnenblumenöl.

Nicht nur der biologische Anbau an Land bietet wertvolle Superfoods und energie- wie auch vitaminreiche Rohkost. Eine Vielzahl an nähr- und mineralstoffreichen Nahrungsmitteln stammt auch aus dem Meer.
Dazu gehören:
- Meeresalgen-Würz-Mix, sehr praktisch, da die kleingehackten Algen sich einfach in fast alle Gerichte streuen lassen und den Gerichten KEINEN bzw. einen kaum bemerkbaren Algengeschmack geben
- Meeres-Algen für Salat
- Fingertang oder Atlantischer Kombu
- Riementang
- Dulse oder Lappentang
- Kelp-Nudeln als Alternative zu Pasta: einfach einweichen und mit einer Pasta-Sauce mischen
Einige dieser Meeresgemüse enthalten hohe Mengen an Eisen, Folsäure, Magnesium, Selen, Chrom und vielen anderen Elementen, die wir im normalen Alltag oft nur zu selten und in zu geringen Mengen zu uns nehmen. Darüber hinaus geben Algen und Tang verschiedenen Rezepten eine ganz besondere Geschmacksnote, die vor allem bei Freunden mediterraner und asiatischer Küche sehr gut ankommt. Damit sorgt auch diese Rohkost sowie Vitalkost für willkommene kulinarische Abwechslung. Wir beziehen den grössten Teil unserer Meeresgemüse aus dem wilden, wenig berührten Nordwesten von Irlands Atlantikküste.
Mikroalgen aus Aquakultur
Neben den oben beschriebenen Meeresgemüse (Makroalgen) bieten sich Mikroalgen als natürliche Nahrungsergänzung wunderbar an. Sie haben mit rund 60% Anteil nicht nur den weitaus höchsten Gehalt an Proteinen aller natürlicher Lebensmittel, sondern sind auch reich an anderen wichtigen Nährstoffen wie Mineralien und Chlorophyll.
